Thanksgiving is over – but waste not for extra savings! Hold on to those extra ingredients to create these five stunning dishes – and stretch your grocery budget even further.
#1. Pumpkin Coconut Curry Soup
I always seem to end up with an extra can of pumpkin.This recipe is a quick and easy way to whip up a 10-minute dinner. I love to serve this with warm pita bread on the side, or I’ll serve this soup with Sriracha Grilled Cheese.
1 Can of Pumpkin
1 Can of Coconut Milk
1 Can of Broth (Veggie or Chicken)
1 Spoonful of Thai Red Curry Paste
Chopped Cilantro (for garnish)
- Combine all ingredients (except the cilantro) in a pot. Stir together.
- Heat the soup over medium heat.
- Garnish with Cilantro
#2. Turkey Posole
This is an after-turkey day tradition in my home. Posole is a Mexican stew that is traditionally made with pork. This recipe is a healthy Mexican twist on your traditional turkey stew. Make sure to serve with cold sour cream and crunchy cilantro.
